Hats off to Cynthia Chua of the Spa Esprit Group (the genius bunch behind faves like House and Tiong Bahru Bakery), who wooed chef Diego Jacquet away from his London eateries to set up shop here in Singas. With stints at Michelin-starred restaurants in Spain and New York, he was also the former executive chef at several London hotels. Today, chef Diego runs two authentically Argentinian (and popular) foodie haunts in London alongside his Singapore venture.
