Here’s a scrumptious Sunday brunch with a twist. At The Capitol Kempinski Hotel Singapore’s 15 Stamford by Alvin Leung, it’s all about the ‘Flying Pass Around’ concept. You’ll enjoy six courses of delightful dishes, featuring the chef’s signatures and brunch classics, all served to your table.
First up, you’ll savour seafood on ice (one sharing platter per table). Think poached Maine lobster, seasonal oysters, black tiger prawns, steamed Australian blue mussels and Himalayan salt-cured king salmon. You can have them fresh or complement them with condiments such as ketchup shallot vinaigrette and yuzu ponzu sauce. Next, nibble on charcuterie treats (one sharing board per table). These include jamon iberico de bellota ham, beef bresaola, salami, olives, sourdough bread and burratina salad.
Still feeling peckish? The third course features unlimited portions of snacks. The line-up changes every week, with items such as seared foie gras with Asian spiced banana and dark rum raisin, braised black angus beef brisket with potato chips, and tuna akami with sago, cucumber, shallot and keta roe. This will be followed by a choice of one main per person. You can pick your fave from a menu of Chilean sea bass, black angus beef ribeye, 15 Stamford laksa with tiger prawns or bone-in lamb char siew.
Sweet tooths will be pleased to know that the dessert selection is free-flow, which means you can dig in to endless goodies. Try the grilled honey pineapple, osmanthus goji jelly and yuzu tart for fresh flavours. Or go for something rich and decadent with the Valrhona black forest butter cake. For a local spin, there’s the gula melaka chendol curd and toasted ice cream.
But that’s not all – save a little stomach space for the last course of the day. The cheese wagon gives you unlimited servings of grana padano, mimolette, gruyere, pecorino, camembert and more. Mix these morsels with dried fruits and chutneys to end your meal in style.
