
Italian restaurants are a dime a dozen in this city, but ones like Prego at Fairmont Singapore have captured our taste buds and certainly know how to keep us coming back for more. This time, we’re revisiting the well-loved dining spot for its spanking new menu additions, crafted with tender loving care by Chef Antonio Facchinetti.
Featuring the crème de le crème of the season’s best ingredients, the new regional delicacies reflect the talented chef’s culinary roots. From 18 March 2015 onwards, you can feast on antipasti like the insalata caprese – gorgeous buffalo mozzarella with vine ripened tomato and basil, doused with white balsamic vinaigrette – or the insalata di polpo, poached octopus with celery, potato kipfler and Sicilian extra virgin olive oil. If you’d like a soup option, there’s the zuppa d’aragosta, better known as creamy lobster bisque with fregula.

For mains, there’s something for everyone, whether you fancy pasta, pizza or something meat-heavy. Carnivores, order the fresh spicy pork salami spaghetti, which comes with roasted garlic and dried chilli, or go for the tender slow-braised veal cheek with broccolini and polenta bianca. Prefer seafood? Choose the Maine lobster angel hair pasta – the additions of sweet chilli, onion, and vine tomato basil sauce make this a light, yet satisfying dish. On the other hand, pizza lovers can unite over the new Uovo. Its fresh toppings include buffalo ricotta, roasted asparagus, free range egg, and glorious truffle dressing.
Save room for dessert, particularly the panino tiepido, a vanilla cream-filled brioche that comes with a strawberry soup and a dollop of fior de latte gelato. Happy noshing!
