Festive Cooking with Perfect Italiano: Turkey Roulade

Thanks to the cooking cheese brand, Perfect Italiano, you now know how to whip up delish creations like ham and asparagus cheese rolls and an alfredo pasta bake. In addition to these great starters for your festive menu, here’s one more tempting treat to make: a turkey roulade with stuffed mushroom, cranberry and spinach. Yum!

Turkey Roulade

Who needs a whole turkey when you can have this traditional festive favourite in easy-to-eat, bite-sized portions? Just pop them into your mouth and voila! A main course that’s ‘no muss, no fuss’. Plus, we love how the mozzarella stretches out nicely after each bite, and how the parmesan helps elevate the flavours. Serves: 4 to 6 people
Prep time: 15 minutes
Cooking time: 60 minutes

Ingredients

Perfect Italiano Mozzarella Grated Cheese (100g)
Perfect Italiano Parmesan Grated Cheese (100g)
Whole turkey breast (x2, sliced horizontally to form a flat open surface)
Portobello mushrooms (50g)
Dried cranberries (50g)
Walnuts (50g)
Spinach (100g)
Garlic cloves (x3)
Olive oil (1 tbsp)
Salt and pepper to taste

Instructions

1. Blend mushrooms, dried cranberries, walnuts, spinach, garlic, salt and pepper in a food processor.

2. In a heated pan, pour olive oil in, followed by blended mixture, and saute for two minutes. Set aside.

3. Place cling wrap on top of a chopping board and lay flattened turkey breast skin side down. Season with salt and pepper.

4. Spread the stuffing (the mixture from step 2) over the turkey breast, making sure the layer is half an inch thick and that there is a half-inch border on all sides.

5. Top with Perfect Italiano Mozzarella and Parmesan Grated Cheese.

6. Roll up the cling wrap to secure the turkey into a roll.

7. Place the turkey rolls in a preheated oven at 200°C for 30 to 40 minutes, or until nicely browned.

8. Let the turkey rolls rest for 10 minutes before slicing them up. Serve immediately.
